METHOD:
1. Fill a pot with about 2 litres of water and bring to a boil.
2. Add 1 teaspoon of rock salt.
3. Add pasta and gently stir to prevent it from sticking. Leave it to cook for 4 minutes.
4. Strain and retain a cupful of pasta cooking water. The salty pasta water adds flavour and helps to bring together the pasta and sauce beautifully.
5. In a separate pot, sautee guanciale over low heat.
6. In a separate pot away from the stove, combine the cooked penne with guanciale, pasta water, and carbonara sauce. Stir for a while to allow the heat from the pasta to coagulate the eggs and create a beautiful sauce. Finally, add in pecorino cheese and stir.
